On May 18th, 1995, Balthazar’s Keuken opened its doors on the Elandsgracht, in the heart of Amsterdam’s Jordaan district. Housed in a former blacksmith’s workshop, the restaurant quickly gained attention for its pioneering concept: a single set three-course menu that changes weekly. At the time, this approach was not common in the Netherlands. It wasn’t about simplicity, but about principle — ensuring all ingredients are purchased fresh each day, and minimizing food waste.

That philosophy of simplicity, seasonality, and respect for the product still forms the heart of Balthazar’s Keuken. Every dinner begins with the now-iconic platter: a beautifully presented plate with five small starters, made to share. A festive start to the evening, celebrating variety, craftsmanship, and the joy of eating together.

From the very beginning, Balthazar’s Keuken has been known for its warm and familiar atmosphere. With an open kitchen, small cosy tables, and personal interaction with guests, it feels more like a dinner party at a friend’s home than a traditional restaurant. That sense of intimacy and hospitality has only grown stronger over the years.

Today, Balthazar’s Keuken is lovingly run by the next generation: son Beau, together with his wife Zwaan and chef Wanne. With deep respect for the restaurant’s roots and a fresh vision for the future, they continue the tradition — blending new ideas with the soul of what Balthazar’s Keuken has always been. Thirty years on, Balthazar’s Keuken remains as vibrant as ever — a unique place where history, hospitality, and flavor come together. And where, every evening, food is still prepared with the same love it began with.
