Housed in a former blacksmith\u2019s workshop, the restaurant quickly gained attention for its pioneering concept: a single set three-course menu that changes weekly. At the time, this approach was not common in the Netherlands. It wasn\u2019t about simplicity, but about principle \u2014 ensuring all ingredients are purchased fresh each day, and minimizing food waste.<\/p>\n<p style=\"text-align: center;\">That philosophy of simplicity, seasonality, and respect for the product still forms the heart of Balthazar\u2019s Keuken. Every dinner begins with the now-iconic\u00a0<i>platter<\/i>: a beautifully presented plate with five small starters, made to share. A festive start to the evening, celebrating variety, craftsmanship, and the joy of eating together.<\/p>\n<p style=\"text-align: center;\">From the very beginning, Balthazar\u2019s Keuken has been known for its warm and familiar atmosphere. With an open kitchen, small cosy tables, and personal interaction with guests, it feels more like a dinner party at a friend\u2019s home than a traditional restaurant. That sense of intimacy and hospitality has only grown stronger over the years.<\/p>\n<p style=\"text-align: center;\">Today, Balthazar\u2019s Keuken is lovingly run by the next generation: son Beau, together with his wife Zwaan and chef Wanne. With deep respect for the restaurant\u2019s roots and a fresh vision for the future, they continue the tradition \u2014 blending new ideas with the soul of what Balthazar\u2019s Keuken has always been. Thirty years on, Balthazar\u2019s Keuken remains as vibrant as ever \u2014 a unique place where history, hospitality, and flavor come together.
